A Vegan Christmas

What do you eat at Christmas?”  is a common question I am asked when I tell people I don’t eat meat.

This year my family and I followed recipes from Abel and Cole, everything of which was vegan, and cooked everything together.  The main dish, for the non-meat eaters, was a stuffed pumpkin dish.

We used three medium sized pumpkins.  The first step is to chop off the top of the pumpkin and scoop out the inside.DSC02843 DSC02845 DSC02848

Then it’s time to make the filling; a delicious mix of rice, leeks, garlic and pine nuts, seasoned with thyme, paprika, turmeric, salt and pepper.  YUM!DSC02849

The filling then gets packed into the pumpkins before being put in oven.DSC02852 DSC02857 DSC02858The pumpkins come out of the oven smelling heavenly and are ready to be eaten along with the rest of the Christmas day spread.DSC02859 DSC02860 DSC02861 DSC02862
