“What do you eat at Christmas?” is a common question I am asked when I tell people I don’t eat meat.
This year my family and I followed recipes from Abel and Cole, everything of which was vegan, and cooked everything together. The main dish, for the non-meat eaters, was a stuffed pumpkin dish.
We used three medium sized pumpkins. The first step is to chop off the top of the pumpkin and scoop out the inside.
Then it’s time to make the filling; a delicious mix of rice, leeks, garlic and pine nuts, seasoned with thyme, paprika, turmeric, salt and pepper. YUM!
The filling then gets packed into the pumpkins before being put in oven.
The pumpkins come out of the oven smelling heavenly and are ready to be eaten along with the rest of the Christmas day spread.
We also prepared this tomato and chilli sauce to be poured onto the piping hot pumpkins.What did you eat for your vegetarian/ vegan Christmas?
